Bone Broth 4 Ways

Bone broth is having a moment right now. I’m pretty good with it– even when I read this NPR article telling me that broth loving hipsters are driving up the price of bones. Calling people hipsters for liking things is also having a moment right now. I’m not as good with that one… but I digress.

I started making my own broth around the time we did our first Whole30… so about two years ago. My mom had gotten me a slow cooker for my birthday that year, because when you are a foodie, you receive slow cookers as birthday gifts apparently. Anyway… it definitely changed the way I viewed food, in more than one way. Chicken now had not one, but two, maybe even three lives. Food waste begone! Y’all know I’m about that. The next NPR article you read could be about compost loving hipsters driving up the price of free-range worms.

I’m not ready to have worms in my apartment yet (waiting till we have a backyard) and since you can’t compost bones anyhow, you might as well get more than one use out of them!

You can make this flight of bone broths at your next soiree as you and your hipster friends discuss where to buy the best chicken feet (and bonus, it’s next to an adorbs juice bar!) Alright I’ll stop being facetious now. I would actually love to run a local broth bar. Or even just have a local broth bar. So I made one in my own home. No one is welcome though, because I am a misanthropic introvert. Okay, okay, NOW I’m done being facetious!

On with the broth!

Note that, I only ever make chicken broth. You can make beef, turkey, whatever… but this recipe is specifically for chicken. As far as bones go, I typically use one full chicken carcass, plus a few extra thigh bones. Sometimes I get crazy with two carcasses. That’s the really good stuff. The higher concentration of bones you have, the more nutrient dense your broth will be. The ideal broth should be gelatin like when it’s cold.

Making it is a fairly un-involved process which makes it relatively easy. All you need to do is throw an assortment of bones in a slow cooker with a few veggie scraps– usually things like onion, carrot, celery, sweet potato… all those nubby little ends you can’t eat and end up chopping off… well save them now! Put them in your freezer till broth day is upon you and throw it in with the bones. Don’t forget a splash of ACV! This is apparently what helps extract the “good shit” (read, collagen) from the bones. Cover everything with water and let it cook on low for 8 to 12 hours.

When it’s done, you get to deal with the messy part. Strain the bones out. It’s not as hard as I’m making it sound but I always spill. I’m a mess.

Once the bones are out, you should be left with pure liquid gold, full of nutrients and ready to dress up however you choose. The following four options are equally delicious AND beautiful, so if you don’t know where to start, you can make a little flight of sipping broths and feel fancy as hell.

From left to right, we have;

  • Avocado Cilantro
  • Bulletproof
  • Cayenne Cleanse
  • Beet Beauty

I used really small cups that only hold 8oz each for these recipes since I was making a flight, but if you want to make a full mug of one of them, double or even triple the recipes.

Avocado Cilantro

  • 8 oz chicken bone broth
  • 1/4 avocado, diced
  • A few sprigs of cilantro
  • A pinch of salt and pepper

Bulletproof

  • 8 oz chicken bone broth
  • 1 tsp ghee
  • 1 scoop collagen peptides (I use Further Foods brand– see “partners” tab for more info)
  • A pinch of salt and pepper

Cayenne Cleanse

  • 8 oz chicken bone broth
  • 1/2 tsp turmeric
  • 1/4 tsp garlic powder
  • Dash of cayenne powder
  • A squeeze of lemon juice
  • A pinch of salt and pepper

Beet Beauty

  • 8 oz chicken bone broth
  • 1 tsp beet juice or beetroot powder (you could also just add a cooked, sliced beet– but I only wanted to add the color and flavor, not the beets themselves)
  • A pinch of salt and pepper

I didn’t specify– but for each of the recipes, you’ll want to heat up all the ingredients in a saucepan on the stove until it’s hot but not boiling. If you wait until it boils, it won’t cool down for like an hour and you will burn your mouth and be sad.

I’m so excited to be sharing this post with you guys! Bone broth is something I’ve been loving for a long time. I feel like a modern pioneer when I make it, and it makes the perfect nighttime drink (or morning if you are a crazy person who doesn’t drink caffeine)

It’s such a good source of collagen and amino acids aka, good for your gut! Nothing is more important than gut health. It is the pinnacle of all other health!

Did you know that most of your serotonin is created in the gut?  Making yourself some broth is basically like making yourself a cup of happiness!

Who could say no to that?
